Simbalan Coffee buys from growers in the Agusan valley and on the Hilong-Hilong range, roasts in Butuan, and ships the same week. The Buenas cup you know, under the name it should have had all along.
Three roasts
What we put in the bag
Every bag is roasted to order in 5-kilo batches. If a lot runs out, we take it off the shelf rather than substitute it.
The route a bean takes
Four hands, one province
Picked ripe
Selective picking by the farmer group. Cherries that are not red go back on the tree for the next pass.
Washed & dried
Fermented overnight, washed, then sun-dried on raised beds until the moisture meter reads 11 percent.
Roasted in 5-kilo batches
Profiled per lot, rested 48 hours, then bagged with a one-way valve and the roast date stamped on the back.
Ground the day you brew
We ship whole bean by default. Ask for a grind at checkout and we set it for your brewer.

Every bag on this page is counted by a scale, not a guess.
Under each shelf bin sits a load cell wired to an Arduino R4. It weighs the bin, divides by the weight of one bag, and posts the number here. When you buy the last bag of Arabica, the site knows before the next customer clicks it.
The same board that runs the shop floor is the board that runs the shop window. No spreadsheet in between.
